Hi, everyone! This is how I cook Paksiw na Isda. Paksiw is a Filipino style of cooking, whose name means "to cook and simmer in vinegar." Common dishes bearing the term, however, can vary substantially depending on what is being cooked. Wikipedia
Paksiw na Isda or fish cooked in a vinegar is a quick and easy to cook that can be served as an everyday dish. I used yellow-fin fish (Big eye tuna), however you can used other variety of fish. But others they put eggplant and bitter gourd. Paksiw is more tasty on the next day and if there is an leftover I fried it.
Ingredients
- 800g yellow fin fish (Big eye tuna) or any type of fish well do
- if fish is large cut it into 1 inch thick
- 1/2 tbsp. whole peppercorns
- 2 large onion, sliced
- 3 cloves garlic, sliced
- 3 pcs green finger chilies (Siling haba)
- thumb sized ginger, thinly sliced
- 1 cup vinegar
- 1/2 cup water
- 1 tbsp. salt
Procedure
- Arrange the fish in pot
- Add onion, garlic, ginger, finger chillies, peppercorn, salt, vinegar, water
- Cover the pot then simmer in medium heat for 20 minutes.
- Transfer to a serving plate
- Serve with hot rice.
