EASY MONGGO RECIPE WITH KALABASA AND LECHON BELLY

Ginisang munggo is a Filipino savory mung bean soup. It is made with mung beans, garlic, tomatoes, onions, various vegetables, and patis (fish sauce). It is cooked with pork, tinapa (smoked fish), daing (dried fish), or other seafood and meat. It is also commonly garnished with chicharon. The name means "sautéed mung bean", though the dish ends up being a soup. The name is in reference to the first step of the cooking process where the spices and the secondary ingredients are sautéed before water and the mung beans are added. I don't understand why people love to cook Monggo on Friday. Typically we can cook any time we want, and it is easy to prepare and cook. There are several ways to cook ginisang monggo and this how I cook. I used pork lechon belly which is left over from New Year's celebration. But you may also cooked it with pork, tinapa (smoked fish), daing (dried fish), or other seafood and meat.
Ingredients
- 1 cup monggo beans
- pork lechon belly into thin small pieces
- kalabasa (squash)
- malunggay leaves (moringa)
- cabbage
- 2 pcs medium size onion
- 3 cloves garlic chopped into small pieces
- 3 cups water
- cooking oil
- salt and pepper to taste
Instructions
- In a pot, put-in the water and the Monggo beans bring to a boil
- And simmer until becomes tender (about 35 to 50 minutes)
- Add more water, if necessary.
- On a separate pan, Heat oil in a cooking pot.
- Sauté garlic, onion, and the pork.
- Cook until the pork turns light brown.
- Pour water into the pan. Let boil. Stir
- Pour the cooked Monggo beans. Cover and let boil
- Put the Kalabasa and simmer until it soften
- Put the Malunggay leaves and Cabbage the cooking pan.
- Add salt and Pepper to taste. Stir and cook for 2 minutes.
- Transfer to a serving plate
- Best serve with rice.
