Pinakbet or Pakbet refers to a mixed vegetable Filipino dish. It also contains pork and shrimp paste or prawns. This is a quick and easy to cook that can be served as an everyday dish. In fact most Carinderias in the Philippines serving their own versions of pinakbet.
The word is the contracted form of the Ilokano word pinakebbet, meaning "shrunk" or "shriveled." Wikipedia
Ingredients
- 1/2 kl. pork belly
- shrimp paste
- 1/2 piece kalabasa cubed
- 10 pieces sitaw cut into 2 inch length
- 8 pieces okra
- 1 piece eggplant sliced
- 1 piece ampalaya sliced
- 2 pieces tomato
- 1 piece onion chopped
- 3 cloves garlic
- 1 cup water
- 3 tablespoons cooking oil
- salt and pepper to taste
Instructions
- Heat the cooking oil in a pot, Saute onion and garlic add shrimp paste and pork belly
- Stir. Cover the pot and cook in medium heat for 10 minutes
- Pour water. Cover let boil
- Put the kalabasa cover the pot and cook for 5 minutes.
- Add eggplant. Stir. Cover the pot and cook for 2 minutes.
- Add sitaw, okra, ampalaya, season with salt and pepper.
- Cover the pot and cook for 3 minutes.
- Transfer to a serving plate
